You cook, mostly normally, without doors

That is the honest description of the middle of the project. Everything works; there is simply nothing covering it. Most households find it less disruptive than they feared and mildly comic by day three.

And the doors come back when the finish is properly ready

which is not the same day it is dry. This is the step that separates a cabinet finish that lasts from one that sticks to the frame in July, and it is worth the extra days.

If the kitchen does not work — wrong layout, failing boxes, a wall in the wrong place — renovation is the answer and refinishing would be money spent on cabinetry you are about to remove.
